Vegan Shamrock Shake Recipe
This shamrock shake is my absolute favorite dessert! I make it ALL the time. It's super simple, really satisfying, and pretty healthy for a dessert! Here's my version:
1 Cup Coconut Milk (you can use another type of plant based milk but light coconut milk is my favorite)
1 Medium Frozen Banana (use fresh if possible)
3/4 Cup Frozen Kale
1/4 Cup Raw Cashews
2 Tablespoons Cacao Nibs
4-5 Chocolate Mint Leaves (you could use a few drops of food grade mint extract or a few mint leaves instead)
4-5 Ice Cubes
Just throw everything into a blender and blend until smooth. If yours is too thick, just add a tablespoon of coconut milk at a time to thin it out while it blends until you reach the desired consistency. You could also add a little agave syrup or coconut nectar if you need this a little sweeter. It tastes like mint chip ice cream!
