Vegan Keto Coffee Recipe

I've only just started on my vegan keto journey but I've had weeks and weeks to plan meals by watching my husband prepare his keto food. I finally got to put all my plans into action and try my hand at vegan keto coffee. It turned out AMAZING! Now, I like sweet coffee but if you don't, there's a modification for that too.

2 Tablespoons Coconut Manna (Coconut Butter)

1 Tablespoon Coconut Cream

1 Teaspoon Raw Cacao Powder

1 Teaspoon Vanilla Extract

1 Dash Cinnamon

1-1 1/2 Tablespoons Monk Fruit Sweetener (Skip this is you don't like sweet coffee)

1- 2 Cups Fresh Brewed Coffee

I just throw everything into my VitaMix and blend on high for 10-15 seconds until it's fluffy and creamy. This stuff is RICH and super delicious. If you're still trying to get into Ketosis (or just like using exogenous ketones and MCT oil) you can add a little exogenous ketones and/or MCT oil to this as well. I usually like to add about 1/2 teaspoon of exogenous ketones (I use a chocolate flavored variety because the plain stuff can be really rough tasting) and 1/2 teaspoon of MCT oil (I'm still getting acclimated to this stuff so I use less).
