A Vegan Keto Salad That's Not Boring AF
If you're like me, you've never met a salad you don't like. That being said, I'll willingly admit that salads can be really dull and a dull salad is miserable to eat especially if you enjoy eating food that actually tastes good. I experiment with salads heavily over the Summer months as I can't stand eating hot food on a hot day. For me, salads have to be quick and easy or it almost feels like the work outweighs the reward. My my favorite 10 minute salad is a veggie packed, super healthy, fiber fest, and it's glorious.
Veggies:
- 1 cup raw cabbage (I use red cabbage)
- 2 cups raw spinach
- 1/4 cup shredded carrots*
- 1/4 cup raw broccoli sprouts
*If you are prone to getting kicked out of keto easily or are limiting your carbs to less than 30g/day then wither omit the carrots or substitute them with another veggie like cauliflower, broccoli, or mushrooms
Dressing:
- 1 clove garlic, minced
- 3 tablespoons Vegenaise
- juice of half a lemon
- 2 tablespoons avocado oil
- pinch of salt
- pinch of pepper
- 2 tablespoons nutritional yeast
Just chop the veggies, mix the sauce in a large bowl, pour the chopped veggies in, toss, and enjoy! This large, crunchy, bowl of gloriousness is the perfect quick salad for the Summer.
