Vegan Keto Iced Coffee
I practice time restricted eating so I'm done eating between 2-4pm everyday so I can fast for 14-16 hours every night. This helps me better control my appetite, my weight, cravings, and I sleep better at night without food in my stomach. Plus, my gut seems to be happier eating solid food before noon and does better with liquids after that. Anyway, I end each day with a cup of coffee and lately iced coffee has been my jam.
I brew some coffee around noon everyday while I eat my lunch/dinner (sounds weird but it works so well for me) and then I let it sit out until it comes to room temperature while I eat. Once it's room temp, I put it in the fridge to cool off until I'm ready to make my coffee.
The coffee making part is easy:
-Coffee
-1 tablespoon MCT oil
-1 tablespoon coconut oil
-1-3 tablespoons monk fruit or other sugar free sweetener, depending on how sweet you want your coffee
-1 teaspoon vanilla extract
-1/4-1/2 cup coconut milk or coconut cream
Optional extras:
-1 scoop exogenous ketones
-1 tablespoon of peanut butter or powdered peanut butter
-1 tablespoon coconut manna
Just blend on low to combine and pour over ice!
