Vegan Keto Waffle Brownies Two Ways
Coconut flour version:
2 tablespoons coconut flour
2 tablespoons cocoa powder
2 tablespoons powdered peanut butter
5 tablespoons coconut oil
1 teaspoon vanilla extract
2 vegan eggs - either using the vegan egg from Follow Your Heart or flax eggs
4 teaspoons monk fruit granulated sugar or sugar free maple syrup
1/4 cup sugar free chocolate chips or other keto friendly dark chocolate chunks
Almod flour version:
3 tablespoons almond flour
2 tablespoons cocoa powder
2 tablespoons peanut butter
5 tablespoons coconut oil
1 teaspoon vanilla
2 vegan eggs - either using the vegan egg from Follow Your Heart or flax eggs
4 teaspoons monk fruit granulated sugar or sugar free maple syrup
1/4 cup sugar free chocolate chips or other keto friendly dark chocolate chunks
For both:
Heat up a waffle iron.
Combine everything in a mixing bowl until a stick batter forms.
Pour the batter into the waffle iron and cook about 1 minute, could be 2 minutes depending on your waffle iron. The brownie should be able to life out of the waffle iron when done.
Top with whipped coconut cream and enjoy warm!
